Customize Your Cut Sheet

We'll send you a detailed cut sheet where you specify exactly how you want your beef processed. This is your chance to customize everything - steak thickness, roast sizes, ground beef packaging, and more.

You Decide:

  • Steak thickness: 3/4", 1", 1.25", or 1.5"
  • Roast sizes: 2 lb, 3 lb, or 4 lb roasts
  • Ground beef: 1 lb or 2 lb packages, 80/20 or 85/15 ratio
  • Organ meats: Heart, liver, tongue, oxtail (optional)
  • Soup bones: Included free with every order

Processing, Aging & Packaging

Your beef is processed at our USDA-inspected facility. We then dry age it for 21 days to develop maximum flavor and tenderness. Finally, each cut is vacuum-sealed and flash-frozen.

Delivery to Your Door

We coordinate a delivery time that works for you. Your beef arrives in insulated packaging to keep it frozen. Have your freezer ready - it's time to enjoy months of premium beef!

Common Questions

What's the difference between hanging weight and take-home weight?

Hanging weight is the weight after slaughter but before butchering (about 60% of live weight). Take-home weight is what you actually receive after butchering (about 60-65% of hanging weight). So a 1000 lb cow = ~600 lb hanging weight = ~400 lb take-home.

How long will the beef stay fresh?

Properly vacuum-sealed and frozen at 0°F, your beef will maintain optimal quality for 12 months. It remains safe to eat indefinitely when kept frozen, though quality is best within the first year.

What breeds do you source?

We primarily source Black Angus and Hereford cattle from verified ranchers. These breeds are known for excellent marbling and flavor. Grass-fed and organic options are available upon request.

Is my deposit refundable?

Yes, your deposit is fully refundable if you cancel before processing begins. Once your animal is scheduled for processing, deposits are non-refundable but can be transferred to a future order.
